Expeditor (Expo)

The expeditor, or expo, works the pass between kitchen and dining room. Expo reads incoming tickets, calls orders and fire times to the stations, checks each plate before it leaves, and assembles finished dishes into complete courses for runners to deliver. During peak service the role is often taken by a chef or a manager.

Expo is the only position that sees the whole board at once. Cooks work their own stations and their own tickets; the expeditor holds every open table in the room and decides the order in which things happen. A ticket carrying an allergy note, a coursing instruction, or a table that has been waiting too long gets sorted here.

The pass is also where the kitchen’s output meets the floor’s promises. If the expeditor is not reading the ticket closely, a table gets the right food at the wrong time, or the wrong food, and no station further back can catch it. Good expos talk to the floor constantly, because what they need to know about a table is rarely written on the ticket.
